Recipes: Tomato & Fennel Soup

Dosha benefits: Kapha

Ingredients:

  • Tomatoes, boiled and peeled 6 medium sized
  • Fennel seeds 100 gms
  • Onion 1 medium
  • Garlic cloves, crushed 7-8
  • Olive oil 2-3 tbsp
  • Crushed black pepper corns to taste
  • Coriander leaves, chopped 3-4 tbsp
  • Fresh coriander sprigs 1
  • Extra virgin olive oil 1 tbsp

Recipe:

  • Heat olive oil in a pan. 
  • Add garlic to the pan and sauté till fragrant. 
  • Roughly chop onion and add with crushed black peppercorns to the pan and sauté.
  • Chop the tomatoes, add to the pan and mix. 
  • Tie up fennel seeds in muslin cloth to make a small bag and add to the pan. 
  • Cover and cook on high heat.
  • Tie the coriander stems and add to the pan. 
  • Add salt and 2 cups water, cover and cook.
  • Remove the coriander stems and fennel seeds bag. 
  • Add chopped coriander leaves, extra virgin olive oil and mix well.
  • Transfer into a glass bowl and grind coarsely with a hand blender. 
  • Garnish with some extra virgin olive oil, a sprig of coriander and serve hot.

Ayurveda Tip:

  • Fennel seeds have several benefits include dispelling gas or flatulence, stopping cramping, aiding heart burn, soothing tummy aches, acidity and indigestion.
