Lemon Rice with Turmeric & Walnuts

Dosha benefits: Vata

Ingredients:

  • 4 cups water
  • 2 cups rice washed and drained
  • 1 tsp salt
  • 4 tbsp oil
  • 1 cup walnuts chopped (can be substituted with peanuts or cashews)
  • 3 tbsp block mustard seed
  • 2 tbsp Urad Dal (yellow split peas can be substituted)
  • 1/3 tsp turmeric
  • 1 cup lemon juice
  • Curry leaves

Recipe:

  • Boil water in a saucepan and keep aside.
  • Add oil to frying pad. When hot add mustard seeds.
  • Once the sees pop, add curry leaves, urad dal and turmeric.
  • Add rice and walnuts, sauté for a few minutes.
  • Then add to the boiled water.
  • Season with salt.
  • Cook rice util it is fluffy.

Ayurveda Tip:

  • Lemon is good for all the three doshas, but best for vata. It increases digestion and increases appetite. Rice is light to digest and pacified vata and pitta.
